Pretty sure the RAMBo 1.1 boards shipping with the Rostock Max are pre-loaded with marlin firmware configured for standard cartesian printers, this is NOT compatible with delta printers. Also the Marlin firmware provided by SeeMeCNC (Johny99's) doesn't provide support for the LCD screen (If i'm not ...

I just came across a better solution. These are pre-crimped wires on female pins with 25mm of wire. I am checking to make sure of the pin size. This way I would be able to keep the locking connector, and get an extension wire.

OK! I think I found the brown wire from the original harness (it's smaller diameter than the others) and any of the orange wires (they are all 3.3v, right) and I will try to connect them.

Hm, I don't have a connection there, but it is working.. You might find without the sense wire connected which is what the brown wire is it seems to work, but under load it doesn't deliver the correct voltage. Oh damn! You can certainly cut off the excess wires, making sure that they are truly excess. As you indicated the exposed cut end has a risk of shorting to the case. I would open the power supply case and cut them off internally as close to the power supply printed circuit board as possible. Less chance of ...

Getting rid of all those PS wires
I can't even get into the PS area to rout wire to electronics bay. I have bundled all the unused wires but they still take up the bay. Is there any reason I can't just cut them off (being careful no bare wires touch the metal case)?

My connectors are plugged into a pcb board marked "smart adapter" with a single row of 20 pins marked AUX-4 and a offset vertical plug of two rows of 4, marked AUX-3. These don't seem to match up with anything on the Rambo.

That's interesting Gwen. The melamine Rostock has 2 different doors - they differ in the cutouts. The door between the X and Y is where the RAMBois mounted (on the back side) and the door between Y and Z is where the optional LCD display is mounted. Maybe the acrylic kit is different!
